My husband claims I'm an expert on knowing what flavors go well together. Every time we go to a restaurant, he wants what I order ~ claiming the restaurant gave me the better food. Ha!
His theory is Not True, some of us cook all the time ~ from scratch I'll add ~ and we know what foods compliment one another. This is truly one of those dishes ~ I LOVE EGGS!!! I make them all the time, and every way you can imagine! That's how this recipe came to be...I wanted eggs, but something a little different. When I went to my refrigerator these were the ingredients I found that I felt would mesh well....Boy....was I right! This has become one of my favorites! And you don't have to just eat it in the morning, it makes an awesome quick dinner.
Famous Eggs
4 Eggs (scrambled)
4 Slices of Ham (lunch meat type ~ Boar's Head)
2 Slices Baby Swiss Cheese ( Boar's Head)
8-10 Cherry Tomatoes ( Diced)
1/2 Avocado ( Cut into small pieces)
Pam Original Cooking Spray
1/2 t Kosher Salt
Pepper to taste
Clean and cut Tomatoes, and Avocado, and set to the side.Cut up ham into small bite sized pieces, cook in frying pan sprayed with Pam over med- high heat till browned on edges ~ this only takes a few minutes. Scramble 4 eggs in bowl, then add to ham, and cook stirring till eggs aren't runny, and are firm. Turn off heat and cover egg mixture with two slices of Baby Swiss Cheese, cover with lid till melted.
Remove from pan. Top with Diced Tomatoes and Avocado. Sprinkle with 1/2 t Kosher Salt and Pepper, to taste. These Eggs are amazing!!! Try them, you will love em!
Tip: When cooking Eggs, you want them just a tiny bit undercooked when you top them with Cheese, and place lid on pan. They will finish cooking from the residual heat.
