Ugly Dip

Well, Summer is here my friends and everyone tends to eat a bit lighter in the heat of the season!!!

I have a ton of summer recipes, but here is an amazing one to start you all off!
It's called Ulgy Dip, or Texas Caviar ~ just depends on where you come from. This dip is loaded with good for you veggies, and beans, so don't feel guilty eating it....although it tastes so good, you'll think you should!
And, Man is it simple to whip up!!!


Eat Ulgy Dip  with Fritos Scoops, as they are strong enough to hold the dip, but you can substitute any corn chip, like tortia.

Ugly Dip:
1  11oz can mexicorn (I use green giant)
1  16oz can black beans (I use Bush's)
4  Green Onions
5  Medium Tomatoes
2  Lg Avocados

Dressing:
1/4 C Canola Oil
1/4 C Red Wine Vinegar
2 T Garlic Powder



Drain the mexicorn, then put in a large bowl. Drain and rinse the black beans, and add to mexicorn. Dice all tomatoes, thinly slice green parts only of green onions, and dice avocados. Add to mexicorn, black bean mixture. Pour canola oil, red wine vinegar and garlic powder on top of all ingredients, mix gently but thoroughly. Serve immediately with frito scoops, or tortia chips.

~This dip is also excellent on top of grilled chicken, or fish.
~The longer it sits, the more intense the garlic flavor becomes.
~Does not store well because the vinegar breaks down the avocado.
