Sausage Stuffed Belgian Waffles

So my Family was craving some good old Breakfast For Dinner...comfort food...ya, know?
I looked all through my pantry and came across this box of Gluten Free Bisquick, I had purchased months ago....and hadn't touched it. I bought it, to support Betty Crocker's effort to offer Gluten Free Baking Mixes...but BOY, was I skeptical. I was sure the mix would be awful, so I haven't used it till tonight...I thought I'd give it a shot...for the sake of the Blog...right???

When I saw the back of the box, there were 4 recipes- Pancakes, Waffles, Biscuits, and Strawberry Shortcakes. I wasn't happy with those options, so I created my own.

I wanted Belgian Waffles, the kind I used to eat in Belgium....the crispy edges, and warm ,chewy, sweet center...I wondered...how could a GF product really compare to The REAL DEAL????

Well, here's what I came up with...and they were MAGNIFICENT!!!!!

You will need:
A Belgian Waffle Iron
Pam Spray- original
1 Lb. Louis Rich Turkey Sausage- cooked and chopped into sm. pieces
Optional Chocolate Chips or Blueberries

For Waffles:
1 1/3 C GF Bisquick
1 C Whole Milk
2 T Canola Oil
1 Egg
4 T Sugar
1/2 t cinnamon ( McCormick)
1 t baking powder ( Clabber Girl)
4 t Vanilla Extract (GF- or homemade)

Preheat the Waffle Iron.
Cook Sausage till juices run clear - then dice into small pieces- set aside.
Mix all dry ingredients, and add to wet ingredients till batter is smooth, and without lumps.
Spray Waffle Iron with Pam, and add 1/2C batter- place 2-3T of diced sausage on batter, then add an additional 1/4 C batter. Close lid, and let cook till light turns off.
Remove with a Large Fork, top with Butter and Pure Maple Syrup.

You can also substitute Chocolate Chips( Ghirardelli, or other GF brand), or Blueberries in place of the sausage.

 I have to say they turned out WONDERFUL....they were chewy, and sweet, and crispy on the outside...Just like I remember. We made all of the variations, and I have to say I loved them all, for different reasons. My kids ( Wheat eating, no Celiacs) said they were the best Waffles they've ever tasted!!!
Yes...One for Mom!!!!
