There are many different types of All Purpose GF flour mixes available on the market today.
I use them from time to time for different recipes, I find each works better for different types of recipes.These mixes are convenient and wonderful, but also very pricey. This lead me to come up with GF mixes I could make at home, and save a lot of money in the process.
There are two homemade mixes I use, I jump back and fort between them. Try them both, and see which works best for you.
All Purpose GF Mix #1
2 1/2 C White Rice Flour
1 C Potato Starch
1 C Tapioca Starch
1/4 C Brown Rice Flour
1/4 C Corn Starch
Mix all ingredients together, and store in an airtight container. Use cup for cup in place of all purpose flour.
All Purpose Mix #2
1 1/2 C White Rice Flour
1 C Sorghum
1 C Potato Starch
1 C Tapioca Starch
1/4 C Corn Starch
1/4 C Soy Flour
Mix all ingredients together, and store in an airtight container. Use cup for cup in place of all purpose flour.
Neither of these recipes contain Xanthan Gum. Xanthan Gum helps create a chewy product that doesn't crumble. Make sure to add Xanthan Gum.
Xanthan Gum Ratios:
For Bread- add 1t for every 1C flour
For Cookies- add 1/4-1/2t for every 1C flour
For Muffins, Cakes, and Sweet Breads- add 1/2-3/4t for every 1C flour
