Gluten Free Blueberry Recipe

Here is my first recipe for you to enjoy....let me know how they turn out!

GF Blueberry Muffins


1/3 C. Shortening (reg. or butter flavored)
1 Egg
2/3 C Sugar 
1 1/2 C Gluten Free Flour Mix ( If yours doesn't have xanthan gum- add 3/4t xanthan gum to flour mix) 
2 1/4 t Baking Powder
1/2 t Salt 
1/2 t Cinnamon
1/2 C Milk
1 C Fresh Blueberries (cleaned)

Preheat Oven to 350 Degrees.

In one bowl, cream shortening and egg.

In second bowl, mix all dry ingredients.

Alternately mix creamed mixture, dry mixture and milk.

If mixture seems too dry, you can add milk 1 t at a time, until you reach a wet enough consistency. 

Carefully add in Blueberries with wooden or plastic spoon- till well mixed.  
You can substitute any other nut, berry, or chocolate chips.

Line muffin tin, and fill to make 12 muffins.

Bake 12-15 minutes in a preheated 350 degree oven, till toothpick comes out clean from center most part of muffin. 

Now living Gluten Free isn't so bad, is it???

  2. You can buy it online, but also at Dierbergs, Whole Foods, and other high end Grocery Stores.(We even have it at Super WalMart here in St. Louis!)
    Xanthan Gum acts as a binding agent in GF baked goods- when you take the Gluten out of baked goods, it looses it's chewy, stretchy texture. Xanthan Gum puts some of that chewy texture back in an otherwise crumbly GF baked good. I would try amazon.com, I buy a lot of my GF products from them.
