Nikol's Chicken

When I was first diagnosed, I was so overwhelmed. I had NO IDEA what I could eat or not eat.
I was sent to a Dietitian, who told me "stick to a low-gliadin diet and you'll be fine." SERIOUSLY????
(Gliadin is the protein found in wheat and other grains that when combined with glutenin- forms Gluten.)
If I would have followed her advice, I would have been one sick little lady!
I decided she was clueless, and I ordered every book on Celiac Disease, and the GF Diet I could find- and I read them , feverishly. It was fascinating what I learned, and an appetite formed to know more, to understand more about Celiac Disease. After that, I was unstoppable. I began educating my Doctors at each visit...and that's kinda fun..when you're a Nurse!
I did seriously educate myself, but that didn't change the fact that adapting to a GF Diet was going to be challenging, and it was.
I decided to stick to simple, home made recipes at first- kinda like the one I made tonight.
Cooking with whole foods made the adjustment much easier, and you will find a lot of my recipes are based around this thinking pattern. During this season in my life I used to joke to my friends "No more dinner's out of a box", at the time, it saddened me- today I am THRILLED my family doesn't eat dinner out of a box!




Nikol's Chicken
 4 Leg Quarters(frozen)
8 Garlic Cloves
1/2 C Olive Oil
1/2 Yellow Bell Pepper(thinly sliced)
1/2 Orange Bell Pepper(thinly sliced)
2 C Cherry Tomatoes(rinsed)
1 t Garlic Powder
1 t Onion Powder
1 T Basil
1 T Kosher Salt
1 t Pepper

Preheat oven to 300. Place Leg Quarters in 9x12  Pyrex Dish.
Crush, or mince Garlic Cloves, thinly slice
Peppers, and place on top of Leg Quarters, cover with Cherry Tomatoes. Pour Olive Oil  on Chicken/Veggie mixture,and top with all dry spices. Cover dish in aluminum foil, and seal around edges.
Bake 2 1/2 Hrs, or till chicken is done.
Serve on top of Sticky White Rice.
