Tonight it's downright chilly, and I was craving something hearty. I decided this may be one of the last evenings of the season to make chili- soon it will be too warm. So off to my kitchen I went, searching for meat and beans of many kinds. I found what I was looking for, and man, were my kids thrilled with the results!
This is my take on Chili, so feel free to add/subtract whatever you like. Follow my motto for recipes "They're mere inspiration, not rules to follow." Have fun cooking, always- never feel tied down to exact measurements- this only works in cooking.....baking is a different story.
Flanagan Family Chili
1 Lb Ground Turkey
1 Lb Spicy Turkey Sausage (remove and discard casings)
1- 29 oz. Can of Tomato Sauce (Contadina)
1- 6 oz. Can of Tomato Paste (Contadina)
1 can of each: Pinto, Great Northern, Lt Red Kidney, Black,Navy, and Pinto Beans.
~ only rinse and drain Black and Kidney Beans~
2 T Chili Powder ( McCormick)
1 T Kosher Salt
1/2 t Black Pepper
1/8 C Frank's Red Hot
2 Bay Leaves (picked out before eating)
Brown ground turkey and sausage in a skillet ~ set aside. In a large pot, add all beans with juice (except for kidney and black which need to be rinsed and drained), Tomato Sauce, Tomato Paste, Franks' Red Hot and all seasonings~ Mix well,then add cooked meat. Cook over medium-low heat for a minimum of 30 mins.~ If you desire you can let it cook for hours, over low heat. Take care to stir chili every 5 mins or so. Remove Bay Leaves before eating ;-)
Meanwhile- make a pot of Sticky Rice- or any rice you eat, according to directions.
Shred 1 C Sharp Cheddar Cheese- set aside.
Chop 2 Green Onions- green parts only- set aside.
Construct Chili Flanagan Style:
1 C Rice on Bottom of Bowl
2 C Chili on top of Rice
Shredded Cheese to top ( as much as desired)
1 Dollop of Sour Cream (Daisy)
Chopped Green Onions to top it all off!
This is an awesome way to make a HUGE Family Meal out of a Pot of Chili.
Very economical.
